1   Small onion, chopped
5 ozs   Fresh asparagus pieces 150 g
½   Red pepper, diced
1 tbsp   Butter 15 mL
1   9-inch (23cm) deep pie shell
½ cup   Grated Parmesan or Swiss Cheese 125 mL
1 cup   Prestige™ Ultra™ Liquid Whole eggs, well shaken 250 mL
1 tbsp   Chopped parsley 15 mL
½ cup   Milk or cream
Salt and Pepper to taste
125 mL

1. Cook onion, asparagus and red pepper in butter until softened.  Spread in bottom of pie shell.  Sprinkle with cheese and parsley. 
2. Combine liquid eggs, milk and seasonings; pour over filling.
3. Bake at 425°F (220°C) for 15 minutes.  Reduce oven to 350°F (160°C) and bake 20 - 25 minutes longer or until set.
