Makes: 4 servings

1 tsp     cooking oil 5 mL
2 cups   Prestige™ Ultra Liquid Whole Egg, well shaken 500 mL
1 tbsp   butter or margarine 500 mL
  salt and pepper to taste

1. In a medium mixing bowl whisk together eggs, salt and pepper.
2. Melt butter or margarine over medium heat in a large skillet; pour in egg mixture.  Cook, without stirring, until mixture begins to set on the bottom and around the edge. 
3. Gently move spatula across bottom and sides of the skillet to scramble.  Continue cooking until egg mixture is cooked through but is still glossy and moist.  Remove from heat.
Serve with multigrain toast and sliced tomatoes.
