Makes: 6 servings

2 cups   Mixed vegetables, frozen 500 mL
6   Prestige™ Light Omelettes
3 tbsp   Pesto, prepared 45 mL
  Fresh basil

1. Cook frozen vegetables according to package directions. Drain. Cut up any large pieces and stir in 3 tablespoons of pesto
2. Microwave omelettes on high from frozen for 2 minutes (or until done) or cook in a convection oven at 325 degrees for 8 minutes*.
3. Open omelettes and spoon ¼ cup of veggies on half the omelette and fold over.
4. Garnish with basil.
