Ingredients

red or green salsa (or to taste)
sliced green onion (garnish)
grated cheddar cheese (garnish)

Directions

  1. Arrange quinoa in a serving bowl; top with black beans, avocado, peppers, corn and Hot Sauce eggs. Drizzle with salsa and garnish with green onion and Cheddar cheese.

Tips

  • Replace the Cheddar cheese with crumbled feta cheese.
  • Quinoa can be replaced with cooked couscous, barley, farro or rice.
  • For a lunchtime make ahead: layer the ingredients into a re-sealable container or Mason jar in the order given. Refrigerate for up to 2 days.
