Ingredients

cooked brown rice
1/2 cup / 125 mL
cooked edamame

shredded cabbage

chopped bell pepper
2 tbsp / 30 mL
Asian sesame vinaigrette (or to taste)
fresh cilantro leaves
toasted sesame seeds

Directions

  1. Arrange rice in a serving bowl; top with edamame, cabbage, carrot, peppers and quartered eggs. Drizzle with vinaigrette and garnish with cilantro and sesame seeds.

Tips

  • Replace the Asian vinaigrette with sweet Thai chili sauce.
  • Brown rice can be replaced with cooked quinoa, barley, farro or couscous.
  • For a lunchtime make ahead: layer the ingredients into a re-sealable container or Mason jar in the order given. Refrigerate for up to 2 days.
